Onion & Pepper Relish - Georgia Style

Ingredients

  • 5 - 14.5 oz. cans petite diced tomatoes
  • 6 bell peppers
  • 6 C. Sugar
  • 2 T. Salt
  • 2 t crushed red pepper flakes
  • 6 Jalapeño Peppers with seeds and ribs removed
  • 3 vidalia sweet onions
  • 2 cups white vinegar
  • 2 small boxes powdered pectin

Preparation

Step 1

Chop all vegetables - Food Processor
Mix everything together, except the pectin, in a large pot. Bring to a boil that can't be stirred down and reduce and simmer for about 1 hour. Add in the pectin and boil for 1 minute.
Pour relish into hot sterilized half pint jars leaving about 1/2 inch head room. Seal and process for 15 minutes.
