- 2 1/2 cups stone ground cornmeal
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1 tablespoon date sugar
- 2 tablespoon unsweetened applesauce
- 2 cups non-dairy milk
- 2 tablespoons apple cider vinegar
- 1/3 cup water
- 2 tablespoons flax seed

Instructions:
Preheat the oven to 400 degrees.
Combine the ground flax seed and 1/3 cup water in a small bowl and let the mixture stand for 5 minutes.
Combine the non-dairy milk and the vinegar in another bowl and let stand.
Mix the dry ingredients together with a whisk or fork.
Mix the applesauce, milk mixture, and flax seed mixture together.
Add the liquid mixture to the dry ingredients. Stir just until they are well mixed.
Pour the mixture into an 8 X 8 inch baking pan that has been lightly oiled.
Bake for 25 minutes.
