Slow cooker black beans with rice

Ingredients

  • 1 bag dried black beans (16 oz)
  • 1 can diced mild green chilies
  • 32 oz chicken broth (4 cups)
  • 1 packet taco seasoning mix
  • 4 garlic cloves, minced
  • 1 medium red onion, chopped (about 1 cup)
  • 2 cups long-grain rice
  • 1 lime
  • 1/4 cup fresh cilantro, chopped

Preparation

Step 1

In colander, rinse beans and discard any shriveled beans. In large pot, add beans and enough water to cover by 2 inches; heat to boiling. Reduce heat to med-low, cover and cook 25 minutes. Drain.

In slow cooker, combine beans, undrained chilies, broth, seasoning, garlic, and onion. Cover and cook on high 4 1/2-5 hours (low 9-10 hours). Prepare rice. Just before serving, squeeze 1 T lime juice. Stir in cilantro and lime juice into beans. Serve over rice.
