Ingredients
- 1 cup sugar
- 2 Tbs sugar
- 1/4 cup cold water
- 1 1/2 cups hot water
- 6 Tbs fresh lime juice
- 3 eggs, separated
- 3 Tbs butter
- 1 Tbs lime rind, grated
- 9-inch pie shell, baked
- 6 Tbs sugar
- 1/8 tsp salt
- Fresh lime slices for garnish

Preparation
Step 1
Combine first 4 ingredients in a sauce pan. Mix well. Add hot water and cook over low heat, stirring constantly, until very thick. Stir in fresh lime juice. Return to heat and cook until thickened. Beat egg yolks lightly. Beat in a small amount of hot mixture. Cook for about 2 minutes, stirring constantly. Add butter and lime rind. Cool. Pour into cold pastry shell. Beat egg whites until stiff but, not dry. Bet in remaining sugar and salt gradually, beating until blended. Spread over top of pie. Bake for 20 minutes in preheated slow oven (300 degrees). Serve cold, garnished with fresh lime slices.
