Ingredients
- 1/4 chopped onion
- 1 tablespoon olive oil
- 1 small yellow summer squash, thinly sliced
- 1 small zucchini, thinly sliced
- 1 garlic clove, minced
- 1 plum tomato, seeded and chopped
- 1/2 tsp dried oregano
- 1/4 cup crumbled feta cheese
- 1/4 tsp salt
- 1/4 tsp pepper

Step 1
In a large skillet, saute onion n oil until tender. Add the squash, zucchini and garlic: saute 6 to 8 minutes longer or until tender. Stir in hte remaining ingredients: heat through
