Ingredients

    small yellow summer squash, thinly sliced

    small zucchini, thinly sliced

  • 1

    garlic clove, minced

  • 1

    plum tomato, seeded and chopped

  • ½

    tsp dried oregano

  • ¼

    cup crumbled feta cheese

  • ¼

    tsp salt

  • ¼

    tsp pepper

Directions

In a large skillet, saute onion n oil until tender. Add the squash, zucchini and garlic: saute 6 to 8 minutes longer or until tender. Stir in hte remaining ingredients: heat through 2/3 cup equals 69 calories, 5 grams fat
