Pineapple Salsa Chicken

Ingredients

  • 6 BL/SL chicken breasts
  • 1 can or jar (20 oz) pineapple chunks
  • 1/2 cup red bell pepper, finely chopped
  • 1/4 cup green bell pepper, finely chopped
  • 1 TBS green onion, chopped
  • 2 tsp fresh cilantro or parsley, chopped
  • 2 tsp jalapeno chilies, chopped

Preparation

Step 1

1) Grill or broil chicken 5 mins on each side or until chicken is no longer pink in center.

2) Drain pineapple chunks; reserve 1/4 cup juice. Combine pineapple chunks, reserved juice, bell peppers, cilantro and chilies in bowl.

3) Serve salsa over cooked chicken.
