Hawiian Banana Nut Bread

Banana nut bread with pineapple. Makes 2 loaves

Ingredients

  • 3 C all purpose flour
  • 2 C sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 3/4 tsp salt
  • 1 C macadamia nuts chopped (I used walnuts)
  • 3 eggs
  • 1 C vegetable oil
  • 2 tsp vanilla
  • 2 C smashed bananas (about 5)
  • 8 oz crushed pineapple with 4 tsp held out
  • 1/2 C powered sugar

Preparation

Step 1

1. Preheat oven to 350. Spray 2 loaf pans with cooking spray then coat with flour.

2. In a large bowl, mix togther dry ingredients. Add nuts and stir.

3. In medium bowl, mix together rest of ingredients. Mix wet mixture into dry mixture until moistened. Pour batter into loaf pans and bake at 350 for 1 1/4 to 1 1/2 hour or until they pass the toothpick test.

For Icing:
Mix 4 tsp pineapple juice with 1/2 C powdered sugar and drizzle over loaves.
