Farro with Bananas, Walnuts, and Dried Cranberries
Farro has a great chewy texture that goes well with crunchy walnuts and slices of soft banana.

- Serves 4
- 5 cups water
- 1/4 teaspoon salt
- 1 cup farro1 cup skim milk
- 8 slices banana
- 1/4 cup chopped walnuts
- 1/4 cup chopped dried cranberries
- 1/4 cup honey
Bring water and salt to a boil. Whisk in grains. Return to a boil. Reduce heat to low. Simmer, stirring often, for 35 to 40 minutes. Top with skim milk, banana, walnuts, cranberries, and honey. Serve immediately.
