Southwest Turkey Burger Parcels with Jalapeño Mayo

Similar in appearance to a burrito but filled with your favourite burger fixin’s, these turkey burger parcels are great for little and big hands alike. The Southwest inspired flavours in this burger really compliment turkey but these could easily be made with ketchup, pickles, mustard or your favourite burger topping.

Ingredients

  • 2 tbsp olive oil
  • 1/2 cup finely chopped onion
  • 1 lb ground turkey
  • 2 tsp minced garlic
  • 1 tsp Worcestershire sauce
  • 1/3 cup olive oil-based mayonnaise, or other favourite mayonnaise
  • 1 tbsp minced jalapeño peppers
  • 2 tbsp chopped fresh cilantro
  • 1 tbsp fresh lime juice
  • 4 large flour tortillas, 9-inch size
  • 4 slices Monterey Jack cheese
  • 4 slices bacon, cooked until crispy, drained
  • 2 plum tomatoes, sliced into 8 pieces
  • 1 avocado, sliced
  • Kosher salt and freshly ground pepper

Preparation

Step 1

In a large non-stick skillet set over medium heat, add 1 tbsp olive oil and onions. Cook until onions are softened, about 4 minutes. Add ground turkey and garlic and continue to cook, breaking up meat with a wooden spoon until meat is cooked through and no longer pink. Add Worcestershire sauce, season to taste with salt and pepper; and set aside.
2.Meanwhile, in a small bowl, combine mayonnaise, jalapeno peppers, cilantro and lime juice and mix well. Season to taste with salt and pepper and set aside.
3.Arrange tortillas in a single layer on a clean surface and spoon 1/4 of the meat mixture down the centre of each tortilla. Top with cheese, mayonnaise mixture, bacon, tomatoes and avocado and roll up tortilla burrito-style. Brush outside of tortillas with remaining 1 tbsp olive oil and sprinkle with kosher salt and freshly ground pepper.
4.Place in a Panini press or set in a grill pan, set over medium heat and cook until crispy and golden brown on both sides, about 5 minutes. Cut in half, crosswise and serve with remaining mayonnaise to use as a dip, if desired.
