BAKED AND CRISPY CHICKEN TENDERS

Ingredients

  • 1 package boneless, skinless, chicken tenders {I used Just Bare Gold N Plump brand}
  • 1 cup pancake mix {Trader Joes brand}
  • 1 cup flour
  • 3 cups panko bread crumbs
  • Salt & Pepper

Preparation

Step 1

Prepare your dredging dishes by placing three bowls in a row. In the first bowl, place one cup of flour. In the next bowl, mix one cup of pancake mix with enough water to make a batter somewhere between thick and thin. In the last bowl, place the 3 cups of panko bread crumbs.

Salt & pepper your chicken to taste. Then, using a fork {or hands, if you are feeling brave}, dredge {aka dunk until coated on all sides} the chicken into the flour. Next, dredge the chicken into the pancake mix. Finally, dredge the chicken into the Panko bread crumbs, pressing to get it coated really well. Place on a non-stick rimmed baking sheet.

Bake at 425 for about 30-40 minutes, flipping about halfway through to brown both sides of the chicken tender. Ovens vary: chicken is complete when it is browned on both sides, cooked through, and no longer pink on the inside. After baking you can use the broiler setting on your oven to crisp the tenders to your liking :) Serve immediately
