Week Day Spinach Pie

Ingredients
- 1 package (2 sheets) frozen puff pastry
- 10 oz. frozen chopped spinach - thawed and drained WELL.
- 8 oz. Blue Heron Farm Greek chevre
- 8 oz. ricotta cheese - or just more chevre….I like a lot of cheese
- 3-4 chopped green onions - both green and white parts

Preparation
Step 1
At least partially thaw the puff pastry before you get started. Preheat oven to temperature indicated on puff pastry package. Lay one sheet of pastry on a cookie sheet. Combine the rest of the ingredients in a bowl. Spread the mixture evenly across the sheet of pastry. Top with second sheet - bake until golden brown and puffy.
You can get fancy and seal/crimp the edges of the pastry with a fork - but I just throw it in, as-is-- with the filling running edge to edge. I'm that kind of cook. Serves 6.
