Ingredients

  • 8 tostada shells (Look - you have to use the corn, fried dealies. They're basically just flat taco shells. -live a little, you won't regret not using a whole wheat tortilla.)
  • 1 can refried black or pinto beans
  • 1 tub refrigerated pico de gallo (you could make your own, but who has time?)
  • 2 avocados, sliced
  • Shredded lettuce
  • 8 oz. Blue Heron Farm Chipotle Blend chevre

Preparation

Step 1

Preheat oven to 400?. Spread a layer of beans on each tostada shell. Crumble 1 oz. chevre on top of each one. (More or less, as you prefer) Heat until cheese is melted and tostada edges are lightly browned. Remove from oven and top with remaining ingredients in whatever proportion you like. Go nuts - there are no rules to tostadas. Serves 4.
