Ingredients

  • 2

    egg whites

  • 1 1/2

    c sugar

  • 1/4

    t cream of tartar

  • 1/3

    c brewed coffee, cooled

  • dash salt

  • 1

    t vanilla

  • or: 1/2 c sugar

  • 1/2

    c shortening

  • 1

    egg

  • 2

    T brewed coffee, cooled

  • 1/2

    t vanilla

  • 1/4

    t salt

Directions

In double boiler, combine egg whites, sugar, tartar, coffee and salt. Beat 1/2 min at low speed to blend. Place over water. Cook, beating constantly, til frosting forms stiff peaks, about 7 min. Remove from water, add vanilla, beat til spreadable, about 2 min. or: Mix sugar, shortening, egg, coffee, vanilla and salt. Beat at high speed til light and fluffy, about 5 min.
