Ingredients
- 4 T butter/oleo
- 3 cloves garlic, minced
- 1 large onion, minced
- 1/2 C dry white wine
- 1 t salt
- 1/4 t black pepper
- 1/2 C grated romano cheese
- 1 (10.75 oz) can chicken broth
- 1 # bay scallops
- 1 # linguine pasta
- 1/4 C chopped parsley

Step 1
In a large skillet, melt butter over med heat & saute garlic & onion till translucent. Add wine, salt, ground pepper, & 1/4 C cheese.
Add chicken broth & scallops; increase heat & boil rapidly for 7-8 minutes. Meanwhile, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8-10 minutes or till al dente; drain.
Reduce heat for scallop mixture & add parsley; place sauce on top of linguine. Sprinkle w/ remaining cheese; serve.
If you like a thicker sauce, you can add 1 t corn starch at the end.
