Heat oven to 450. Drizzle oil into a 9x13 baking dish. Combine 4 tbsp butter and 1/3 hot sauce and cook over low heat, whisk until butter melted. Remove from heat and allow to cool 10 minutes. Combine 1 pound ground chicken (preferable thigh meat) with 1 large egg, 1/2 celery stalk minced, 3/4 c bread crumbs 1 tsp salt and now add hot sauce mixture. Roll into 3/4 inch balls (fairly small) and pack firmly into baking dish. They should be touching each other. Roast for 15-20 minutes ot until firm and cooked through. Serve with BLUE CHEESE DRESSING which is whisk 3/4 c sour cream, 1/3 c crumbled blue cheese, 1/3 c whole milk, 1/3 c may, 1 tsp salt and 1 tbsp red wine vinegar. I TRIED THESE 3/12 AND THEY WERE GOOD, THE KIDS DID NOT LIKE THEM THOUGH.
