Chicken meatballs - Mario’s Osteria’s

Ingredients

  • 4 pounds fresh chicken breast, finely ground
  • 4 large eggs
  • 2 cups Italian bread crumbs
  • 3 tablespoons cold water
  • Pinch of celery salt
  • Pinch of granulated garlic
  • 2 tablespoons fresh minced garlic, sauteed in olive oil until fragrant
  • 1/4 cup onion, finely chopped and sauteed in olive oil until soft
  • Pinch of crushed red pepper flakes
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup freshly grated parmesan cheese
  • 2 1/2 cups homemade or store-bought marinara sauce, divided
  • Kosher salt and freshly ground black pepper, to taste

Preparation

Step 1

1 Preheat oven to 350 degrees F. Using a large bowl, combine all ingredients using ½ cup marinara sauce, season with salt and pepper, to taste. Reserve remaining sauce for simmering meatballs.

2 Roll mixture into 4-ounce balls. Place on a baking sheet. Bake until cooked through, 20-25 minutes. Transfer meatballs and remaining marinara to a large saucepan over low heat. Simmer 10 minutes or until ready to serve.

Makes about 2 dozen meatballs.
