Ingredients

  • 1 lbs skinless, boneless chicken breasts, cut in half
  • 1/3 to 1/2 cup flour
  • 1 onion, chopped
  • 1 green bell pepper, seeded/chopped
  • 1/2 lb sliced mushrooms
  • 1 teaspoon minced garlic
  • 1- 28 oz chopped tomatoes and juice
  • 1 cup white wine
  • 1 cut chicke broth
  • 1 teaspoon dried basil leaves
  • 1 teaspoon dried oregano leaves
  • 1 bay leaf
  • salt and pepper to taste

Step 1

Dredge chicken breasts in the flour to coat well. In a large non stick pot, heat the olive oil and cook the chicken on medium heat until chicken is brown on all sides about 5 to 7 minutes. Transfer chicken to a platter.

in the smae non stick pot, add the onion, green papper, mushrooms, garlaic and saue over med heat until tender aout5 minutes. Add the tomatoes, wine, chicken broth, basil, oregano and bay leaf. Return the chickn to the skillet. Bring to a boil, reduce heat and simmer, covered for about 35 to 45 minutes or until chicken is tender. Season with sale and pepper.
