Chicken and Peanuts ****

This is a recipe from Planters Peanuts,
I've been making this since the mid 80's.

Ingredients

  • 1 T soy sauce
  • 1 T cornstarch
  • 2 large chicken breasts
  • 2 T soy sauce
  • 1 T sugar
  • 1 T cooking sherry
  • 1 ts vinegar
  • 2 T oil
  • 1 ts crushed red pepper flakes
  • 1/3 cup scallions
  • 1/2 ts ginger powder
  • 1/2 cup cocktail peanuts

Preparation

Step 1

1- Cut chicken breasts into 1/2inch cubes. Put chicken in medium sized bowl.
2- Mix together 1 T soy and 1 T corn-
starch and pour over chicken. Mix well, set aside.
3- Heat oil in wok, cook pepper flakes til black. Add coated chicken, stir fry for about 2 minutes.
4- Remove chicken from wok.
5- Stir fry scallion and ginger for 1 minute. Add chicken back to wok, cook 2 minutes.
6- In small bowl, mix 2 T soy, 1 T sugar, 1 T sherry and 1 ts vinegar.
Pour over chicken mixture and heat for 1 minute.
7- Stir in peanuts, serve over rice.
