Roasted two potato salad

  • 2 lb Yukon gold potatoes
  • 1 1/2 lb sweet potatoes
  • 1/3 c olive oil
  • 1/2 tsp each thyme, salt and pepper
  • 4 slices bacon
  • 1/4 c chopped fresh parsley
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1/2 tsp hot pepper sauce
  • 4 green onions, sliced

Step 1

Peel potatoes, cut into 1" cubes. In large bowl, toss together potatoes, 1/4 cup of the oil, thyme, salt and pepper.
Spread potatoes in large shallow roasting pan; roast in 375 oven turning once, until tender and golden, about 40 minutes. Let stand for 5 minutes. Transfer to large bowl
Meanwhile, in skillet, cook bacon over medium heat until crisp. Transfer to paper towel lined plate, cut into small pieces.
In bowl, stir together parsley, lemon juice, mustard, hot pepper sauce, green onions, bacon and remaining oil. Toss with potatoes.
