Ingredients
- Glaze:
- 1 cup butter, softened
- 1/2 cup sugar
- 2 Tbsp lemon juice
- 2 tsp lemon zest, finely grated
- 2 1/2 cups flour
- 1/2 cup powdered sugar
- 1 Tbsp butter, softened
- 1 Tbsp lemon juice
- 1 Tbsp lemon zest, finely grated
Preparation
Step 1
Preheat oven to 350 degrees. In a large bowl, combine butter, sugar, lemon juice and lemon zest. Beat at medium speed until creamy. Reduce speed to low. Add flour; beat until mixture resembles coarse crumbs. Knead dough by hand until smooth. Press dough evenly into a lightly greased 8-inch square baking pan. Bake 35-40 minutes or until light golden brown. Cool completely.
Glaze:
In a small bowl, combine powdered sugar, butter and lemon juice; mix until smooth. Spread thin layer of glaze over cooked shortbread; sprinkle with 1 tablespoon lemon zest. Let stand 30 minutes to set. Cut into 2 1/2 x 3/4-inch strips.
