Lemon Meringue Bars

Ingredients
- 2 sticks (16tbsp) unsalted butter softened
- 1 3/4 cup plus 2 tbsp flour
- 1/4 cup plus 3 tbsp confections sugar
- 2 tbsp plus 1 tsp freshly grated lemon zest
- 1/4 tsp coarse salt
- 6 large eggs plus 4 large egg whites
- 2 1/4 cup plus 2 tbsp sugar
- 3/4 cup plus 3 tbsp fresh lemon juice

Step 1
Preheat oven to 350
Put butter, flour, confectioner sugar, 2 tsp lemon zest and the salt in the bowl of an electric mixer fitted with the paddle attachment mix on medium speed until well blended
Transfer mixture to a 9x13 rimmed baking sheet. Press batter evenly into baking sheet Chill in freezer 10 minutes Bake until golden 20-22 minutes Cool completely
Make filling. Whisk tog whole eggs, 1 3/4 cup plus 2 tbsp granulated sugar, the lemon juice and 1 tbsp plus 2 tsp lemon zest. Pour over chilled crust. Bake untill filling is set. 18-20 minutes. Let cool completely on wire rack. Keep oven at 350
Make merigne topping. Put egg whites and 1/2 cup sugar in a clean mixer bowl fitted with the whisk attachment beat on medium high speed untill stiff peaks form
Spread meringne with the back of a spoon over filling swirling to create soft peaks bake until meringne begins to brown 8-10 minutes Let cool
