Garlic and Herb Oven-Fried Fish

We thought this was very good!! I used tilapia because it's cheaper & what we always have on hand. After reading other reviews, I doubled the herbs & spices. I used lemon pepper instead of black pepper. My pan wasn't cooking the fish as brown as I would have liked, so I reduced the oven temp to 425 & baked for about 10 minutes.
Ingredients
- 1 cup panko breadcrumbs
- 2 TB chopped fresh basil
- 2 TB chopped fresh parsley
- 1 tsp onion powder
- 2 large garlic cloves, minced
- 2 large egg whites, lightly beaten
- 1 large egg, lightly beaten
- 2-3 TB flour
- 6 fish fillets
- Lemon pepper
- Salt
- 2-3 TB olive oil, divided
- Cooking spray

Preparation
Step 1
Preheat oven to 425°. Combine panko, basil, parsley, onion powder, & garlic in a shallow dish. Place egg whites & egg in a second shallow dish. Place flour in a third shallow dish. Sprinkle fish with lemon pepper & salt. Dredge fish in flour, then eggs, then panko mixture. Heat 1 TB oil in a large nonstick skillet over medium-high heat. Add 2-3 fish fillets; cook 2-3 minutes on each side or until browned. Place fish on a broiler pan, or baking sheet with a wire rack, coated with cooking spray. Repeat the procedure with oil & fish. Bake for 5-10 minutes or until fish flakes easily when tested with a fork or until desired degree of doneness.
