Ingredients

  • 1 Medium Zucchini, chopped.
  • 1 thick slice of onion, chopped.
  • 1 can of black beans, drained and rinsed.
  • 2 TBSP Salsa
  • Salt and Pepper to taste.
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp curry powder OR smoked paprika

Preparation

Step 1

Spray a skillet with no-stick spray. Sautee the onions on med-high heat until they start to lose their water. Add the zucchini and cook for a few minutes more. Add the beans and salsa. Sprinkle with the spices. Heat until warmed throughout.
