Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 celery stalk, diced
- 1/4 medium red onion, diced
- 1/4 Golden Delicious apple, quartered then cut into thin slices
- 1/4 cup raisins
- 1/4 cup red seedless grapes, halved
- 2 tablespoons sweet pickle relish
- 1/2 cup mayonnaise
- 1 tablespoon yellow mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh pepper
- 1/2 teaspoon lemon juice
Preparation
Step 1
Fill water tank with water.
Place the chicken breasts in steamer basket.
Cover steamer and set time to 8 miutes.
Steam for 6-8 minutes or until internal temperature reaches 165 degrees on a meat thermometer.
While steaming, combine remaining ingredients in a bowl using a spoon.
When steaming is complete, let rest for 5 minutes.
Transfer the chicken breasts to a cutting board then slice into 3/4-inch squares.
Add chicken to the bowl; toss well.
Garnish as desired and serve.
