BREAST****Jalapeno-Lime Chicken Skewers with Avocado Cream Dip

23/08/14 - These were pretty good for both of us but the chicken itself was nothing special and could basically be replaced with any marinade. It was the avocado cream that was the star of the show - leftovers would be great with crudités or Dan said it would kill in a taco.
Update - I've amended the recipe by combining a WW chicken marinade that we've had before and liked with the Avocado Cream sauce for serving.
11/03/17 - UPDATE - Left this chicken out altogether and served the sauce with my Taco Spice ActiFry chicken - Yummy!

Ingredients
- Chicken (2 servings):
- 2 tablespoons lime juice, (about 1 lime) + grated zest (Optional)
- 1 tablespoons extra virgin olive
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1 jalapeno, sliced OR a couple of splashes of Tabasco sauce (much easier)
- 8 ounces chicken breasts cut into 1-inch cubes
- Avocado Cream Dip (8 servings):
- 1 medium-sized ripe avocado
- 1/2 cup 2% Greek yogurt
- 1 tablespoon chopped cilantro (Optional)
- 2 tablespoons lime juice (about 1 lime)
- 1 teaspoon Tabasco brand Original Red Sauce
- 1/4 teaspoon salt
- 2 tablespoons olive oil
- Skewers:
- 12 1-inch square pieces white onion (about 1/2 onion)
- 12 1-inch square pieces green bell pepper (about 1/2 pepper)
- 12 1-inch square pieces red bell pepper (about 1/2 pepper)
Preparation
Step 1
Soaking wooden skewers in warm water 30 minutes before grilling will help prevent them from burning.
Whisk marinade ingredients in a large bowl until smooth. Remove 1/4 of mixture and fold chicken into remainder. Mix well. Refrigerate covered for 30 minutes to overnight.
Toss veggies with remaining marinade and refrigerate separately. (n.b. I've yet to make the veggies, I usually just fry the chicken cubes in a non-stick pan for a couple of minutes per side)
Place all dip ingredients in a food processor and blend until smooth. Refrigerate until serving.
Thread ingredients on metal or soaked wooden skewers.
Preheat grill to medium-high heat. Cook the skewers on the first side, about 2 minutes, then turn, cooking for 2 minutes on all 4 sides.
Serve with Avocado Cream Dip.
