Preparation
Step 1
To begin, wash your chicken and smear a bit of fresh lime juice all around (it really adds a nice flavor to it even after cooking)
Season your chicken with your mix of dry ingredients(Salt, Pepper, Garlic salt)
Heat a large skillet over a medium high heat.
When hot, swirl with two tablespoons olive oil and brown chicken on all sides.
Remove chicken to a plate, and saute onions and crushed garlic cloves until deeply bronzed.
Deglaze pan with 1/4 cup Balsamic Vinegar.
Stir in some rosemary, pepper, 1/2 cup Balsamic Vinegar, 1/2 cup chicken stock and honey.
Bring to a boil and add thighs back to pan.
Reduce heat to low, cover and simmer vigorously for 20-30 minutes, turning several times, until chicken is cooked through and sauce has concentrated.
Remove from heat, garnish with green onions & dinner is ready!!!!
Serve with your choice of side dish.
