Mexican Soup -Crock pot

This is my own concoction . I like it because I can get 2 meals from it and they are served in different ways.

Ingredients

  • 2 large chix breast
  • 1 can chilies
  • 4 cloves garlic
  • fresh ground salt and pepper
  • can of tomatoes
  • 2 can of chix or veggie broth ( i used one of each)
  • 1/2 -1 red pepper chopped
  • 1/2-1 red onion chopped

Preparation

Step 1

Put all in the crock pot. If chix is frozen can put in the night before. An hour before serving add a can of black beans.

Top with fresh scallions, fresh cilantro and cheese.

I took the broth out of the leftovers and then made burritos with the mix...also adding rice, and the cilantro and scallions. Add cheese and sauce on top and bake.
