This is my own concoction . I like it because I can get 2 meals from it and they are served in different ways.more
large chix breast
fresh ground salt and pepper
can of tomatoes
can of chix or veggie broth ( i used one of each)
red pepper chopped
red onion chopped
Put all in the crock pot. If chix is frozen can put in the night before. An hour before serving add a can of black beans. Top with fresh scallions, fresh cilantro and cheese. I took the broth out of the leftovers and then made burritos with the mix...also adding rice, and the cilantro and scallions. Add cheese and sauce on top and bake.
