Mackerel with Pecan Coating

Ingredients

  • 4 4-oz Atlantic mackerel fillets, skin left intact and bones removed
  • 1/8 t sea salt
  • 1/8 t fresh ground black pepper
  • Olive oil cooking spray
  • 2 T Dijon mustard
  • 1 to 2 T raw honey
  • 1/4 c whole-wheat panko bread crumbs
  • 4 t unsalted pecans, chopped
  • 1/4 c fresh Italian parsley, chopped

Preparation

Step 1

Preheat oven to 450. Sprinkle fillets with salt and pepper and place, skin side down in a 13x9-in baking dish. Mist tops of fillets with cooking spray.

In a small bowl, combine Dijon and honey. Brush tops of fillets with Dijon mixture, dividing evenly. In a separate medium bowl, combine panko, pecans and parsley. Sprinkle panko mixture over top of fillets, dividing evenly.

Bake at 450 for 13-15 mins or until fish flakes easily with a fork.
