Key Lime Cheesecake

Ingredients

  • 2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 24 ounces cream cheese, softened
  • 1 1/4 cups sugar
  • 3 eggs
  • 1 cup sour cream
  • 1 1/2 tsp. grated lime zest
  • 1/2 cup Key lime juice

Preparation

Step 1

Combine the graham cracker crumbs, 1/4 cup sugar and the butter in a bowl and mix well. Press over the bottom and 1 inch up the side of a greased 9 inch springform pan. Bake at 350 for 8 minutes. Let stand until cool.
Beat the cream cheese in a mixing bowl until fluffy. Add 1 1/4 cups sugar gradually, beating constantly. Beat in the eggs 1 at a time. Stir in the sour cream, lime zest and Key lime juice. Pour into the prepared crust. Bake at 325 for 65 minutes.
Turn off the oven and prop open the door. Let the cheesecake stand in the oven for 15 minutes. Run a knife around the edge of the pan and remove the side. Let stand on a wire rack until completely cool. Chill, covered for 8 long hours. Garnish with strawberries.
