Ingredients

  • Country bread, torn into 1" pieces (8 cups)
  • Olive oil
  • Salt & Pepper
  • 1/2 small red onion, chopped
  • 1/4 cup champagne vinegar
  • 1/4 cup sherry vinegar
  • Romaine hearts
  • 1 large tomato, chopped
  • 1 large cucumber (or 2 small), chopped
  • 1 cup strawberries, chopped
  • 2 Tbls. chopped dill
  • Shredded rotisserie chicken (about 4 cups)
  • 1/4 salted roasted pumpkin seeds

Preparation

Step 1

Preheat oven to 350. Toss bread witht 2 Tbls. oil and season with salt & pepper. Bake on large baking sheet for 15 mins or until crips. Let cool.

In lrg. blow, toss onion with both vinegars and let stand for 10 minutes. Whisk in 1/4 oil and season with salt & pepper. Add all ingredients except pumpkin seeds and toss well. Sprinkle with seeds and serve.
