Ingredients
- 1 8 inch flour tortilla
- 1/4 cup of roasted chicken, bite sized. (Store bought is fine)
- 1/4 cup Monterey Jack Cheese, shredded
- 1/4 cup(packed) fresh spinach leaves
- salt to taste (i like to use a pinch of house seasoning)
Preparation
Step 1
On the flour tortilla layer the cheese, chicken, and spinach on one half of the tortilla. season to taste.
Fold over other half. lightly brush with olive oil on the side facing up.
Place tortilla on a heated grill pan. Cook until underside is slightly brown. Flip over and lightly brush that side of the flour tortilla. Cook until the underside is slightly brown and the cheese is melted.
Cut in half and serve warm with salsa, sour cream and guacamole.
