Ingredients
- 12 ears of corn
- 2 large red or green peppers
- 1 large onion
- 1 cup sliced celery
- 2 cups vinegar
- 2 cups water
- 2 tbsp. mustard seed
- 4 tsp. salt
- 1 1/2 tsp. tumeric
- 1 1/2 cups sugar
- 1/2 cup flour

Step 1
Cook cobs in salted water, boil and simmer 5 minutes, drain, cool, cut corn from cobs. Combine corn, peppers, onions, celery, vinegar, water, seed, salt, and tumeric in kettle. Bring to a boil and lower heat and simmer for 20 minutes. Combine sugar and flour in bowl. Stir in kettle slowly, cook, stirring until mixture thickens and bubbles for 3 minutes; ladle into jars.
Process 15 minutes in water bath, or 45 minutes in pressure cooker at 10 lbs.
