    ears of corn

    large red or green peppers

    large onion

    cup sliced celery

  • 2

    cups vinegar

  • 2

    cups water

  • 2

    tbsp. mustard seed

  • 4

    tsp. salt

  • tsp. tumeric

  • cups sugar

  • ½

    cup flour


Cook cobs in salted water, boil and simmer 5 minutes, drain, cool, cut corn from cobs. Combine corn, peppers, onions, celery, vinegar, water, seed, salt, and tumeric in kettle. Bring to a boil and lower heat and simmer for 20 minutes. Combine sugar and flour in bowl. Stir in kettle slowly, cook, stirring until mixture thickens and bubbles for 3 minutes; ladle into jars. Process 15 minutes in water bath, or 45 minutes in pressure cooker at 10 lbs.
