Ingredients
- 2-1/2 cups orzo
- 1 clove garlic, minced
- 1/4 cup chopped red onion
- 1/4 cup freshly chopped parsley leaves
- 1 lemon, zested and juiced
- 1 T. olive oil
- 1/4 cup freshly grated Parmesan
- 1/2 tsp. salt
- 1/2 tsp freshly ground black pepper
Preparation
Step 1
Cook orzo as directed on package (or cook 1/2 water and 1/2 chicken broth to add more flavor to orzo).
In a large bowl, toss together orzo with remaining ingredients. Can be served warm or chilled.
