Ingredients
- 1 1/2 cups all purpose flour
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 tsp. nutmeg
- 2 sticks unsalted butter, softened
- 1 cup packed light brown sugar
- 1 cup sugar
- 2 eggs
- 3 cups old-fashioned oatmeal (not instant or quick oats)
- 1 1/2 cups raisins
Preparation
Step 1
Adjust oven racks to upper-middle and lower-middle positions and heat oven to 350. Whisk flour, salt, baking powder and nutmeg together. Using mixer beat butter and sugars until light and fluffy. Add eggs one at a time and mix until combined. Slowly add dry ingredients and mix. Mix in oats and raisins. Roll into balls and place on 2 baking sheets. Bake until cookies turn brown around edges. Switch and rotate sheets halfway through. I am paranoid about overcooking my cookies so I think I baked them for about 10-12 minutes. Made 24 medium sized cookies.
