Tropical Fruit & Mint Salad

Ingredients

  • Papaya Mint Sauce:
  • 1 papaya
  • 5 T sugar
  • 3 T fresh lime juice
  • 1 1/2 T fresh mint
  • Salad:
  • 1/2 pineapple
  • 1 papaya
  • 2 bananas
  • Shredded coconut (garnish)

Preparation

Step 1

Peel & seed papayas and coarsely chop.
Peel pineapple and chop into 1/2" pieces
Peel & slice bananas into 1/2" pieces

Purée sauce ingredients till smooth. Cover, refrigerate.
Mix fruit in large bowl, then spoon into goblets & drizzle with mint sauce.
Garnish.
