Ingredients

  • Icing:
  • 2 cups flour
  • 1 cup butter
  • 1/2 cup powdered sugar
  • 4 whole eggs
  • Juice of 2 lemons
  • 4 tbsp flour
  • 2 cups granulated sugar
  • 1/4 tsp salt
  • 1/3 cup butter
  • 3 cups sifted powdered sugar
  • 3 tbsp whipping cream
  • 1 1/2 tsp vanilla
  • 4 oz. cream cheese

Preparation

Step 1

Cream together the flour, butter and powdered sugar. Press into ungreased 13x9 inch pan. Bake at 350 for 20 minutes until light golden color. Beat the eggs. Add lemon juice, flour, sugar and salt. Mix together. Pour over baked crust. Bake at 350 for 25 minutes until golden brown. Let cool completely before icing.

Icing: Cream the butter and sugar together. Add whipping cream and vanilla. Cream the cream cheese into this mixture. Spread icing on cooled lemon layer, allowing the icing to harden a bit. Cut into squares.
