Ingredients
- 50 g snow peas, trimmed, thinly sliced
- 50 g beansprouts, trimmed
- 1 green onion, thinly sliced
- 1 long red chile, thinly sliced
- 1 cm finely grated piece of ginger
- 1 clove garlic, crushed
- 2 Tbsp oyster sauce
- 4 Eggs
- olive oil

Preparation
Step 1
Place snow peas in a heatproof bowl. Cover with Boiling water for 3 minutes. Drain and rinse in cold water
Mix snow peas, sprouts, onion, and chile.
Combine ginger, garlic, oyster sauce and 1 Tbsp hot water
Beat eggs with 2 Tbsp cold water in a bowl until mixed. Season with pepper
Heat wok over medium high. Spray or coat with oil. Pour half of eggs in and swirl to coat. Cook until barely set. Slide onto plate. Repeat with other half of eggs mixture.
Spread filing over omelette and fold in half. Drizzle with sauce and serve
