Ingredients

  • 1

    lb. ground turkey

  • 3/4

    cup cornmeal

  • 1

    cup chicken or vegetable broth

  • 1

    14.5-oz. can tomatoes & green chilies

  • 1

    small onion, chopped

  • 3/4

    cup corn

  • 1/2

    cup kidney beans, drained

  • 2

    t. chili powder

  • 1

    t. cumin

  • Shredded cheese (optional)

Directions

Spray skillet; brown turkey. Drain any excess liquid. Add turkey to slow cooker. In a bowl, combine cornmeal with broth and whisk thoroughly. Let stand 5 minutes. Add cornmeal to the slow cooker with all other ingredients. Mix thoroughly. Cover and cook 3-4 hours on HIGH or 7-8 hours on LOW. Serve with cheese and sour cream if desired. Serves 6
