Oatmeal Dinner Rolls

This is a favourite recipe which we found in the Nov.'06 issue of Guideposts magazine.

Ingredients
- 2 c. water
- 1 c. dry quick oats
- 3 Tbsp. butter or margarine
- 1 pkg. dry yeast
- 1/3 c. warm water
- 1/3 c. packed brown sugar
- 1 Tbsp. sugar
- 1 tsp. salt
- 4 3/4-5 1/4 c. flour
Preparation
Step 1
In saucepan, bring 2 cups water to boil. Add oats & butter. Cook & stir 1 minute. Remove from heat & cool to lukewarm.
In large bowl, dissolve yeast in 1/3 cup water. Add cooled oats mixture, sugars, salt & 4 cups flour. Beat until smooth. Add enough flour to form a soft dough. Turn onto floured surface; knead 6 to 8 minutes, kneading in more flour, until smooth & elastic. Place in greased bowl, turning once to grease top. Cover & let rise in warm place until doubled, about 1 hour.
Punch down. Let rest 10 minutes. Shape into 18 balls. Place in greased 9" round or square baking pan. Cover & let rise until double, about 45 minutes. Bake at 350°F for 20 to 25 minutes, until golden brown. Remove from pan to wire rack to cool.
