Blue Cheese-Bacon Potatoes

Ingredients

  • 4 medium baking potatoes
  • 1/2 c dairy sour cream
  • 1/4 c (1 oz) crumbled blue cheese
  • 1/4 c milk
  • 4 tlbs butter or margarine
  • 3/4 tsp salt
  • 4 slices bacon, crisp-cooked, drained and crumbled.

Preparation

Step 1

Rub potatoes with shortening. Bake in 400F oven for 1 hour, till potatoes are done.
Remove from oven, cut a lengthwise slice from top of each potato. Scoop out inside of each: mash. Add sour cream, blue cheese, milk, butter, salt and dash pepper to mashed potatoes; beat with electric better till fluffy. Spoon miture lightly into potatoes shells. Place on baking sheet; return to 400F oven for 15 minutes or till heated through. Sprinkle each with crumbled bacon.
