Poppy Seed Quick Bread

Ingredients

  • Dry Ingredients:
  • 3 cups sifted flour
  • 1 1/2 teaspoons baking powder
  • 2 Tablespoons poppy seeds
  • Liquid Ingredients:
  • 3 eggs
  • 1 1/3 cup milk
  • 1 cup cooking oil
  • 1 teaspoon almond extract (or 1 teaspoon lemon extract)
  • 2 1/4 cups white sugar
  • Glaze (Optional):
  • 1/8 cup orange juice
  • 1/3 cup sugar
  • 1/4 tsp. vanilla
  • 1/4 tsp. almond flavoring

Preparation

Step 1

1. Preheat oven to 350 degrees.
2. In a large bowl, beat with an electric mixer the oil, flavoring, eggs, milk, and sugar.
3. Add in the dry ingredients and mix well. Using a rubber scraper, scrap down the sides of the bowl.
4. Using a piece of paper towel and some shortening, grease two 9" x 5" bread pans. Pour half the batter into each pan.
5. Bake for one hour. Cool a little then glaze.

Glaze: Mix the above together with a spoon and drizzle over the cooled breads. Allow to set for several hours or overnight.
