  • 1 box corn muffin mix(Jiffy)
  • 3 zucchin, quatered and thinly sliced
  • 1/2 cup chopped onion
  • 2 T margarine
  • 3/4 cup cheddar cheese
  • 2 eggs
  • 1/2 cup milk

Preparation

Step 1

-preheat oven to 350 degrees
-grease pie pan

1- Saute zucchini and onion in margarine, until tender.
2-Stir together eggs, milk,muffin mix, and 1/2 cup of cheese, stir to combine. Fold in vegetable mixture.
3- Pour into greased pie pan. Sprinkle top with remaining cheddar cheese.
4- Bake 40 minutes
