Individual Potato Gratins

Ingredients

  • PAM
  • 3 large all purpose baking potatoes, peeled and thinly sliced
  • 1 c. grated Swiss cheese
  • 1 onion, chopped
  • EVOO
  • kosher salt and fresh ground pepper, to taste
  • 1 c. heavy cream

Preparation

Step 1

Preheat oven to 375°F.
Saute onion in EVOO for 10 - 15 minutes, until the onion begins to caramelize.
Spray 10 muffin tins with PAM. Layer potato slices, cheese and onions into each muffin cup. Season with salt and pepper and top each gratin with 2 T. of heavy cream.
Place muffin tin on a baking sheet and cover the top with foil. Bake for 40-45 minutes, removing the foil halfway through the cooking time.
Invert the gratins onto plate and serve.
