My Cauliflower Mash

  • 1 bag of frozen cauliflower
  • 1 potato
  • 2 wedges of HEB light spreadable cheese
  • 1 oz of cheddar cheese
  • Spices for taste: salt, onion powder, garlic powder, freeze-dried chives.

Step 1

Instructions:
Start by baking the potato in the microwave: Poke holes in the potato and microwave for 3 minutes. Then flip it over and microwave for 3 more minutes. Take out and set on cutting board to cool.

Empty the cauliflower into a large microwave safe bowl. Cover (using plastic tupperware lid) and microwave for 6 minutes. Remove the cauliflower and hand mash/chop it with a potato masher. Then cover again and microwave for 4 more minutes.

Cut the baked potato into large chunks/pieces. Put about half of the cauliflower (first!) and half the potato into the food processor and use the grind setting until it gets a mashed potato consistency. Then do the same with the other half. You may need to repeat this step a couple times since we have the world's tiniest food processor.

Melt the cheddar and the cheese wedges in a small dish in the microwave. Then put all of if into the large mixing bowl with the cauliflower/potato mixture and stir until it's all mixed completely. Then add the spices to taste.
