Lime Chicken Thighs w/ quick avocado salsa****

I like using chicken thighs, they're hard to over cook and quite flavorful. I can't always find boneless/skinless thighs, but I stock up the freezer when I do. They are also great on the grill.
Ingredients
- Salsa:
- 2 med tomatoes, cored, halved, and chopped
- 1/2 white onion, finely chopped
- 1 cup coarsely chopped fresh cilantro leaves
- 2 T white vinegar
- salt & pepper
- 3 med avocados, coarsely chopped
- Chicken:
- 4 T butter
- 8 boneless, skinless chicken thighs
- 1 ts salt
- 1 ts pepper
- 1/2 ts paprika
- 1 lg yellow onion, thinly sliced
- 1 garlic clove, finely minced
- 1/3 cup lime juice(about 3 limes),plus wedges for serving
Preparation
Step 1
1- To make the salsa, stir the tomatoes, onion, cilantro, vinegar, and S&P together in a large bowl. Add the avocados, toss gently to combine, and set aside.
2- To make the chicken, melt the butter in a large skillet over med-hi heat. Add the chicken and cook until it is browned on all sides, about 8-min. Sprinkle the S&P and paprika over the chicken. Add the onion and garlic and continue to cook, stirring occasionally, until the onion is soft, about 5 minutes.
3- Add the lime juice to the skillet and bring it to a simmer. Cover the skillet and simmer until the chicken is cooked through, 15-20 min. Serve with the avocado salsa and lime wedges.
