  • 6 large yams
  • 1/2 plus 1/3 cups margarine, softened
  • 1 cup sugar
  • 1 tablespoon vanilla
  • 2 eggs
  • 3/4 cup brown sugar
  • 1/2 cup milk
  • 1/3 cup flour

Step 1

Peel and cut yams into large chunks. Boil in water with a few sprinkles of salt until tender. Then drain and mash well in a mixer. While mixing add sugar, eggs, 1/2 cup margarine, milk, and vanilla. Again, mix well. Put mashed potato mixture into a greased 13x9 inch dish. In a seperate bowl, combine brown sugar, flour, and 1/3 cup margarine. Mix well with a fork and drop spoonfuls over top of sweet potato mixture.

Bake at 350 degrees for 45 minutes.
