    rib celery, sliced

    tsp ea: ground coriander, ground cumin and pepper

    boneless skinless chicken breasts (about 450 g)

    pkg (900ml)sodium-reduced chicken broth

    cups diced peeled sweet potato

    can (796ml) no salt-added diced tomatoes

  • cup dry green lentils, rinsed

    cup chopped fresh cilantro

Directions

In large saucepan, heat oil over med heat; cook onion and celery, stirring occasionally until softened, about 3 min Add garlic,ginger, curry powder, coriander, cumin and pepper;; cook, stirring,until fragrant, about 1 minute. Stir in chicken, tomatoes, broth, lentils, and potato. Bring to a boil, reduce heat cover and simmer until lentils are tender, 15 - 20 min Remove chicken breasts to plate and shred meat, using two forks Return chicken to soup; stir in cilantro and aalt
