Ingredients

  • 1/4 cup diced bacon or pancetta
  • 1 shallot thinly sliced
  • 1 cup cream
  • 14 cup grated parmesan
  • 2 oz gorgonzola cheese ( preferable Gorgonzola dolce)
  • 5 ounces fresh fettucini
  • Olive oil
  • 12 cup fresh peas
  • white wine

Preparation

Step 1

Heat 1 tablespoon olive oil over medium heat in a large pan.

Add the shallots and bacon and sauté being careful not to burn it
Bring the pasta to a boil in salted water
Add the cream to the bacon and shallots, cream will boil and begin to reduce
Add the peas and gorgonzolaa and stir so the gorgonzola melts
Add a splash of white wing
Add drained fettucini noodles, mix well and add salt and pepper to taste
Add the fresh parsley just before serving
