Cake - GINGER PEAR CAKE

  • Non-stick spray
  • 3 ripe pears, peeled and cored
  • 1 Tbsp no Trans fat margarine
  • 2 Tbsp. brown sugar
  • 1 box gingerbread mix (Krusteuz)
  • 1 cup water
  • 1 egg
  • Fat free whip topping

Preparation

Step 1

Preheat oven to 350 degrees F. Line 8 inch round cake pan with parchment paper, spray with non stick spray sides and bottom of pan.
Melt margarine in microwave for 40 seconds, pour into bottom of pan. Sprinkle brown sugar evenly over the bottom of cake pan.
Cut pears in half and microwave pears for 5 minutes to partially cook. Place pears in a circle, cut side up around pan with narrow part in middle of pan.
Mix gingerbread mix with water and egg, pour over pears.
Bake at 350 for 35 minutes, or until knife come out clean when inserted in middle of cake.
Cool for 10 minutes and then run knife around edge of pan, invert on serving plate.
Cut into 12 wedges and serve with fat free whip topping.
